ORGANOLEPTIC CHARACTERISTICS
The pitted oil has a lower acidity and an almost double polyphenol content compared to a traditional oil pressed with the stone. Pale yellow gold in color and limpid; it presents itself with equally soft and delicate aromas of olive with notes of white fruit that refer to banana and apple. Harmonious and balanced to the taste, even with very strong and marked fruity, as well as persistent and clear even
when closed, sensations, it stands out for its elegance and finesse. The sensation of bitter and spicy, decisive and balanced, combined with good fluidity, make it pleasant to the palate. Suitable for appetizers and seafood first courses; excellent on legumes, vegetables, roasts and grilled meat.
