All the grapes selected come from their own vineyards, located in the municipality of Ziano Piacentino, on particularly favorable grounds for exposure and microclimate.
From the precise method of production of Ortugo grapes, an ancient vine cultivated exclusively on the Piacenza hills, this precious wine is obtained which, after a natural refermentation, becomes pleasantly sparkling and inviting.
Beautiful and bright straw yellow color, the Ortugo has a delicate flavor, with fresh notes of citrus and apple, it is excellent as an aperitif and with dishes based on fish.
The grapes are de-stemmed and after a small maceration in contact with the skins of about 15 hours, they are squeezed and fermented in small cement tanks at a natural temperature between 26° and 28° C. No clarification or filtration is done in any processing phase.
The refermentation, for the ‘prise the mousse’, takes place in the bottle with the traditional method.
