Shelf-life: for sale in pieces: 20 days, for sale in forms: 60 days

Crust: Thin and greyish

Appearance: Table cheese with compact dough, creamier towards the crust and drier in the central part.  Square form.

Flavor: Sweet and buttery in the fresher forms.  More aromatic in the aged forms.
